  • 2 lrg avocados halved, drizzled wit Juice of 2 limes to prevent discolora
  • 2 lb red snapper fillets cut bite size
  • 1 ounce clarified butter Freshly-grnd white pepper to taste
  • 2 tsp brown sugar
  • 8 ounce tiny frzn shrimp thawed, rinsed
  • 5 ounce pimento diced
  • 1 x garlic clove smashed
  • 1 ounce rum
  • 2 tsp chopped fresh dill
  • 1/4 c. salted butter
  • 1 ounce finely-grated Parmesan cheese

Direcciones

  1. Preheat broiler. Keeping skin intact, mash avocado flesh. Broil mashed avocados in skin shells for 2 min. Set aside on a hot plate.
  2. Saute/fry fish pcs in clarified butter on high heat. Season with white pepper. Stir in brown sugar. Add in shrimp, pimento, and garlic. Pour in rum, shaking pan constantly. Add in dill. Add in butter and remove pan from heat, letting butter heat into the sauce.
  3. Spoon fish mix onto avocado halves, sprinkle with grated cheese and broil again for a few min, till cheese begins to brown.
  4. This recipe yields 4 servings.
