Receta Baked Potatoes With Crab Stuffing

Ingredientes
- 4 med. baked potatoes
- 1/2 c. butter
- 1/4 c. heavy cream
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 T finely minced onion
- 1 c. grated med. Cheddar cheese
- 1 c. (6 1/2 ounce) crabmeat, liquid removed, picked over and flaked
- 1 c. (3 ounce) minced broiled mushrooms, liquid removed
Direcciones
- As soon as potatoes are baked through, cut in halves lengthwise and scoop out all of pulp. Mash potatoes, adding cream and butter. Stir in onion, 2/3 cup grated cheese, flaked crabmeat and mushrooms. Pile in potato shells and sprinkle remaining grated cheese over tops. Bake at 350 degrees till cheese melts and potatoes are hot.Note: I like to use fresh mushrooms that I have sauteed.
