My daughter as a young child is exposed with my passion and that is constantly I am on a research for what is good and new that they will love to eat.I remember her seated in her high chair while watching my activities in the kitchen.She started schooling and she would give me handwritten recipes,she also does her own research too.This recipe came into my kitchen because of her.She told me to try cook Chili con Carne because she thinks its delicious and yes it is.she's damned right!But I dont remember the exact recipe anymore because I change,add this,add that etc.We also eat this with you know what,Rice!another way is with hotdog and bread with cheese and tomatoes on top;with crunchy shell tacos of course:its a Filipino favorite too;with triangle tacos:bake it with chili con carne and cheese on top(oh wow!) and the most exciting part I bake it wrapped with tortilla topped with cheesy cream sauce.

Ingredientes

  • 1 kg ground beef
  • 5 tbsp olive oil + 5 tbsp olive pil
  • 2 medium white onion chopped
  • 6 cloves garlic grated
  • 1 tsp cumin powder
  • 2 tsp paprika
  • 1/2 tsp oregano
  • 2 tsp dried chili flakes
  • 2 sticks cinnamon
  • 2 cans of whole tomato chopped ( whole peeled 14.5 oz/411gms)
  • 1 small can beer ( Heineken or any brand)
  • 2 cans red kidney beans,washed and drained ( 15.25oz/432gms)
  • 1 1/2 tsp salt
  • 1 tsp ground black pepper
  • 8 pcs tortilla wrap(3 heaping tbsp per wrap)the rest chili con carne is for you to decide how to enjoy it.
  • 1 cup grated red and white cheddar cheese
  • 1 cup grated mozarella cheese
  • For the Cream Sauce:
  • 1/4 cup butter softened
  • 1/2 tsp salt
  • 1/4 cup flour
  • 1/4 tsp ground white pepper
  • 1/4 cup parmesan cheese grated
  • 2 cups milk room temperature
  • 1 cup cream
  • 1-2 tsp tabasco sauce(optional)

Direcciones

  1. Heat 5 tbsp olive olive and put ground beef.
  2. Make it brown and then set aside.
  3. In the same pan/sauce pan,heat 5 tbsp olive oil.
  4. Saute onion,let it whilt then add garlic.
  5. Once the aroma comes out put back the browned ground beef into the pan.
  6. Mix properly and wait for 2 minutes.
  7. Add the ff:cumin,paprika,oregano,dried chili flakes,cinnamon.
  8. Continue stirring and cook for 5 minutes
  9. Then add chopped whole tomatoes including the juice and beer.
  10. Lower the heat and simmer for 1 hour(covered).
  11. Check it once in a while and if the mixture is dry add a little water every now and then.
  12. After an hour,put the red kidney beans,salt and pepper.
  13. Continue simmering for 45 minutes more.
  14. Check every once in a while and add water if necessary.
  15. Continue cooking until you reach the desired consistency.
  16. Note:Usually I use 1/2 to 1 cup of water.
  17. For the Cream Sauce:
  18. Heat a saucepan,add a little oil then add in the butter
  19. Melt the butter and add in the flour
  20. Whisk until properly combined then add the milk
  21. Continue stirring then add salt,parmesan cheese and pepper
  22. Heat through while stirring then add the cream
  23. Continue stirring until you reach the desired consistency
  24. Oh my..this is so good!
  25. Note:this is good for about 8 pcs tortilla wrap.Wet the baking pan first by putting at least 1/4 cup of cream sauce then carefully pile tortilla logs.Then pour the remaining cream sauce.Garnish on top with lots of cheese.Bake at 350 or 180 for 30 minutes.
