  1. I love this Banana Butter much more than the Apple Butter.
  2. Thoroughly mash bananas; measure 4 c. into 4 to 6 qt kettle or possibly Dutch oven. Add in sugar, lemon juice, cherries, and butter; mix well. Bring to hard rolling boil, stirring constantly. Reduce heat; simmer gently, uncovered, 20 min, stirring often. Pour into warm jars, leaving 1/2 inch headspace.
  3. Adjust lids. Process in boiling water bath (half-pints)
  4. 10 min.
  5. Makes 6 half-pints.
