Receta Banana Carrot Muffins

Ingredientes
- 3 x carrots grated
- 2 x bananas mashed
- 1/4 c. butter or possibly margarine
- 1/2 c. packed brown sugar
- 1 x egg
- 2 c. whole wheat flour
- 2 tsp baking pwdr
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp vanilla
- 1/2 c. pecans minced
Direcciones
- Grease muffin tins with margarine or possibly Pam. Grate carrots and set aside. Mash bananas with fork-set aside. In a mixing bowl, mix together flour, baking soda, baking pwdr and salt. In a mixing bowl, cream margarine and brown sugar till fluffy. Add in egg and beat well. Add in flour mix to banana mix. Don't over mix. Add in grated carrots, vanilla and nuts. Combine carefully. Put batter into muffin tin-makes 12 muffins. Bake at 350 degrees for 20-25 min or possibly till cake tester or possibly toothpick comes out clean.
