Receta Banana Coffee Cake Muffins

Ingredientes
- 2 1/2 c. unsifted flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 T instant coffee granules
- 1 egg
- 1 c. semi-sweet chocolate chips
- 1 T water (warm)
- 1 1/3 c. mashed fully ripe bananas (3 lg.)
- 2 sticks butter
- 1 1/4 c. sugar
Direcciones
- Stir together flour, baking pwdr, baking soda and salt in small bowl. Reserve. Dissolve instant coffee in hot water. Stir in mashed bananas. Reserve.Beat together butter and sugar in large bowl till light and fluffy. Beat in egg. Fold in bananas. Stir in flour; mix till well blended. Mix in chocolate pcs. Divide batter evenly into greased muffin cups. Bake at 375 degrees for 20-30 min till done. Cool on wire racks.
