Receta Basic Muffin Mix

- 1 3/4 c. All-purpose flour
- 1/4 c. Sugar
- 2 1/2 tsp Baking pwdr
- 3/4 tsp Salt
- 1 x Beaten egg
- 3/4 c. Lowfat milk
- 1/3 c. Veg. oil

- This is the basic muffin recipe and dozens of flavors can be added. Recipes follow:In large mixing bowl stir together the flour, sugar, baking pwdr, and salt. Make a well in the center . Combine egg, lowfat milk, and oil. Add in egg mix all at once to flour mix. Stir just until moistened: batter should be lumpy. Spoon into greased or possibly paper-bake-c.-lined muffin c., filling each about 2/3 full. Bake in 400 degree (F) oven for 20 to 25 min or possibly until golden brown. Remove from pans: serve hot.
- Makes 10 to 12muffins.
- Self rising muffins: Prepare Basic Muffin batter as above, EXCEPT substitute 1 3/4 c. self-rising all-purpose flour for the all-purpose flour: omit baking pwdr and salt.
- Blueberry Muffins: Prepare Basic Muffin batter as above. Combine 3/4 c. fresh or possibly frzn blueberries, thawed, and 2 Tbsp. additional sugar.
- Add in 1 tsp. finely shredded lemon peel, if you like. Carefully mix in batter.
- Cranberry Muffins: Prepare Basic Muffin batter as above. Coarsely chop 1 c. fresh or possibly frzn cranberries; combine with 1/4 c. additional sugar.
- Carefull fold into batter.
- Apple-Raisin Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 tsp. grnd cinnamon into the flour mix. Carefully fold 1 c. minced peeled apple and 1/3 c. raisins into batter.
- Jelly Muffins: Prepare Basic Muffin batter as above. Spoon 1 tsp. jelly atop batter in each muffin c. before baking.
- Date-Nut Muffins: Prepare Basic Muffin batter as above. Fold 2.3 c. coarsely minced pitted dates and 1/3 c. minced walnut or possibly pecans into the batter.
- Cheese Muffins: Prepare Basic Muffin batter as above. EXCEPT stir 1/2 c. shredded Swiss or possibly Cheddar cheese into flour mix.
- Ham 'n Cheesers: Prepare Basic Muffin batter as above EXCEPT stir 1/2 c. finely minced, fully cooked ham into the egg mix. Stir 1/2 c. shredded cheese (2 ounces) and 1/2 tsp. dry mustard into the flour mix.
- Bacon Muffins: Prepare Basic Muffin batter as above, EXCEPT cook 4 slices bacon until crisp; drain and crumble, reserving drippings. Combine bacon drippings with sufficient veg. oil to make 1/3 c. total mix; use in place of the 1/3 c. veg. oil. Carefully fold bacon into batter.
- Banana-Nut Muffins: Prepare Basic Muffin batter as above, EXCEPT decrease lowfat milk to 1/2 c.. Stir 1 c. mashed banana and 1/2 c. minced nuts into batter.
- Pumpkin Muffins: Prepare Basic Muffin batter as above, EXCEPT increase sugar to 1/3 c.. Add in 1/2 c. canned pumpkin to the egg mix. Stir 1/2 tsp. each: grnd cinnamon and grnd nutmeg into flour mix. Stir 1/2 c. raisins into batter.
- Apple-and-Spice Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 tsp. grnd cinnamon into flour mix. Add in 1 c. minced, peeled apple with the egg mix: stir just till moistened. Mix 2 Tbsp. sugar and 1/2 tsp. grnd cinnamon; sprinkle mix over muffins before baking.
