Ingredientes
- 16 ounce Great Northern Beans, Liquid removed And Rinsed
- 1 x Cucumber, Minced
- 1 x Red Bell Pepper, Minced
- 2 Tbsp. Safflower Oil
- 2 Tbsp. Cider Vinegar
- 1 Tbsp. Lemon Juice
- 2 Tbsp. Fresh Basil, Minced
- 1 Tbsp. Fresh Parsley, Chopped
- 1/4 tsp Black Pepper
Direcciones
- In mixing bowl, combine beans, cucumber and red pepper. In a small bowl or possibly measuring c., combine dressing ingredients. Pour over bean mix and toss. Using a slotted spoon, arrange on lettuce leaves on individual chilled salad plates. Garnish with minced scallions.
- Variation:*Add in minced red onion to the salad
