  • 1/2 c. oil
  • 4 sm onions minced
  • 4 x garlic cloves minced
  • 2 tsp black mustard seeds
  • 12 x curry leaves - (to 15)
  • 4 tsp split unpeeled urad dal soaked in water for 45 min
  • 4 tsp golden brown raisins
  • 4 c. cooked basmati rice
  • 2 tsp turmeric Salt up to 2 tspns
  • 2 tsp sugar
  • 1/4 c. halved roasted cashews
  • 1/4 c. lemon juice
  • 8 x green onions finely minced
  • 1/2 c. minced cilantro for garnish

Direcciones

  1. Heat oil over medium heat in large skillet or possibly wok. Saute/fry onions and garlic till soft, 2 min. Add in mustard seeds, curry leaves, urad dal and raisins and saute/fry 2 min.
  2. In a bowl, mix rice, turmeric, salt, sugar and cashews, saving a few cashews for garnish. Spoon rice into skillet with onion mix and heat through, stirring, 2 to 3 min. Sprinkle with lemon juice. Garnish with reserved cashews, green onions and cilantro.
  3. This recipe yields 8 to 10 servings.
