Ingredientes
- 1 1/2 c. sliced onion - (6 ounce) sauteed
- 12 ounce sweet Italian sausage casings removed, minced and cooked - (abt 2 1/2 c.)
- 2 Tbsp. Cajun spice mix
- 2 Tbsp. Tabasco brand Pepper Sauce
- 12 x Large eggs beaten - (24 ounce)
- 1 c. grated Cheddar cheese - (6 ounce)
- 12 x biscuits
Direcciones
- Saute/fry the onions, sausage, Cajun spice mix, and Tabasco brand Pepper Sauce. Hold hot.
- For each serving, ladle 2 ounces of the egg into a nonstick omelette pan and cook the egg omelette style till it sets.
- Top the omelette with 1 1/2 ounces of the onion and sausage mix and 1/2 oz of the cheddar cheese. Fold omelette in half, and then into quarters. Place on a biscuit.
- This recipe yields 12 servings.
