Ingredientes
- 1 Tbsp. Extra virgin olive oil
- 2 x Italian sausages,casings removed
- 1 x Carrot, finely diced
- 1 x Celery stalk, finely diced
- 1 x Onion, finely diced
- 2 x Garlic cloves, chopped
- 6 c. Chicken broth (1.5 L)
- 1 x ( 28 ounce.) can chickpeas, rinsed and liquid removed
- 4 c. Coarsely torn spinach, tough stems discarded Healthy pinch cayenne pepper
Direcciones
- Heat extra virgin olive oil, sausage, carrot, celery, onion and garlic in a large frying pan over medium heat. Stir frequently to break up sausage meat, and cook till meat is no longer pink. Add in chicken broth and chickpeas; cover and cook for 10 min to blend flavors.
- Remove 4 c. soup and puree in a blender or possibly food processor till smooth. Return to saucepan, stirring to blend. Add in spinach and cayenne. Simmer 5 min, or possibly till spinach is soft.
- Yield: 8
