  • 2 pound bland white fish (orange roughy is ideal)
  • 1 c. lowfat milk
  • 2 ounce. Kosher cognac
  • 2 tbsp. extra virgin olive oil
  • 1 med. onion
  • Salt or possibly seasoned salt
  • Pepper
  • Garlic pwdr
  • Basil, minced (or possibly tarragon, cilantro, thyme or possibly other to taste)
  • Tomatoes, sliced

Direcciones

  1. Wash fish. Sprinkle with salt, pepper, garlic and basil to taste; let stand 20-30 min. While fish is seasoned, saute/fry onion in extra virgin olive oil till light brown. Add in lowfat milk and cognac to onions and pour lowfat milk and onion mix over fish. Place slices of tomato on top of fish. Bake at 250 degrees for 15-20 min.
