Receta Black Bean Soup Caribbean

Ingredientes
- 1 pound black beans
- 3 strips bacon, minced
- 1 pound ham ends or possibly smoked ham hock
- 2 tbsp. extra virgin olive oil
- 1 tbsp. garlic, minced
- 1/2 c. onions, diced
- 1/2 c. tomato puree
- 1/2 c. sherry
- 2 hard-boiled Large eggs, minced
- Flour as needed
- Bouquet garni
- 2 1/2 quarts. beef, chicken or possibly vegetable stock or possibly water with bouillon
- Salt, pepper & oregano to taste
Direcciones
- Soak beans overnight in cool water, then drain. Saute/fry bacon, onions and garlic in extra virgin olive oil, dust with flour to absorb excess fat. Add in stock, beans and tomato puree, sherry, ham hock and bouquet garni and cook till beans are done (45 to 60 min).
- Remove ham and about 1/3 of the beans. Puree the rest of soup using a food processor, blender or possibly strainer. Dice ham and add in it to soup along with remaining beans. Season to taste. Before serving, add in a touch of sherry and top with hard-boiled Large eggs.
