Receta Boniato Mash With Mojo

Ingredientes
- 4 x boniatos peeled, and cut into medium dice Lowfat milk sufficient to cover boniato
- 1/4 c. extra virgin olive oil
- 1/4 c. thinly-sliced garlic cloves Salt to taste Freshly-grnd black pepper to taste
- 2 x limes juiced
Direcciones
- Place boniatos in a medium saute/fry pan and cover with lowfat milk. Cook boniato in lowfat milk till tender.
- Meanwhile, heat oil in a small saucepan till almost smoking, add in garlic, shaking pan constantly and season with salt and pepper. When the garlic turns golden, add in the lime juice. Set the mojo aside till the boniato is done.
- Drain boniato, and while still warm, puree the boniato through a food mill or possibly mash with a potato masher; add in the mojo and season with salt and pepper.
- This recipe yields 4 servings.
