  1. 1. Preheat oven to 350F.
  2. 2. Butter and lightly flour two 8" round cake pans.
  3. 3. Cream the butter till softened and slowly add in the sugar, beating till light. Add in the egg yolks and vanilla and beat to blend well.
  4. 4. Sift the flour, baking pwdr, and salt onto a piece of waxed paper.
  5. Alternately blend the dry ingredients and the lowfat milk into the butter mix in three stages. Beat till smooth.
  6. 5. In a separate bowl, beat the egg whites till stiff but not dry.
  7. Stir a third of the whites into the cake batter and gently mix in the remaining. Spoon into cake pans.
  8. 6. Bake for 30-35 min, or possibly till a straw inserted in the center ofthe cake comes out dry. Cold in pans for 5 min before turning out onto racks.
