  1. 1. Soak dry scallops. (Reserve soaking liquid.)
  2. 2. Strain soaking liquid; then combine with stock, sherry and salt. Trim and peel radishes.
  3. 3. Heat oil. Add in scallops and radishes; stir-fry 2 min.
  4. 4. Add in soaking liquid-stock mix and heat quickly. Then simmer, covered, till scallops are tender (about 15 min).
  5. 5. Meanwhile blend cornstarch and remaining cool water to a paste. Then stir in to thicken, and serve.
