  • 4 boneless, skinless chicken breasts, about 1 1/2 lbs.
  • Salt to taste
  • Freshly grnd pepper to taste
  • 26 sm. white onions
  • 3 tbsp. extra virgin olive oil
  • 1/2 pound mushrooms, sliced and quartered (whole if small)
  • 8 basil leaves
  • 1/3 c. dry white wine
  • 1 tbsp. butter

Direcciones

  1. Cut each piece of breast in half crosswise. Sprinkle with salt and pepper. Peel the onions and put in saucepan. Add in cool water to cover and salt to taste. Bring to a boil and cook about 2 min. Drain.
  2. Heat oil in large skillet and add in chicken. Cook approximately 30 seconds; add in onions. Cook 10 min and turn breasts. Scatter mushrooms throughout - 3 more min. Add in basil, wine and butter. Cook and cover about 3 min. Remove basil and garnish each breast with the basil leaves. Serve with onions and mushrooms in sauce spooned over.
