Receta Broccoli Garden Soup

Ingredientes
- 3 c. Broccoli, minced
- 6 c. Yams, peeled and minced
- 6 c. Defatted Chicken Broth,divid
- 2 x Medium Onions, minced
- 4 x Cloves Garlic, chopped
- 1 tsp Extra virgin olive oil
- 1 c. Celery Tops, minced
- 1/4 tsp Grnd Allspice (opt)
- 2 c. Watercress, minced
- 1 x Grnd Pepper to taste
Direcciones
- Simmer the yams, covered, in two c. chicken broth 10 min or possibly till soft; puree in food mill or possibly processor. Set aside. In large pot with cover, saute/fry the onions and garlic in oil till the onions are translucent/soft and starting to brown. Add in celery. Saute/fry a few min, Add in broccoli and remaining chicken broth.
- Simmer, covered, eight min or possibly till tender-crisp.
- Stir in puree; add in seasonings. Serve immediately or possibly serve chilled. Top each portion with 1/4 c. minced watercress.
- Makes 11 one-c. servings.
