  • 3 c. Broccoli, minced
  • 6 c. Yams, peeled and minced
  • 6 c. Defatted Chicken Broth,divid
  • 2 x Medium Onions, minced
  • 4 x Cloves Garlic, chopped
  • 1 tsp Extra virgin olive oil
  • 1 c. Celery Tops, minced
  • 1/4 tsp Grnd Allspice (opt)
  • 2 c. Watercress, minced
  • 1 x Grnd Pepper to taste

Direcciones

  1. Simmer the yams, covered, in two c. chicken broth 10 min or possibly till soft; puree in food mill or possibly processor. Set aside. In large pot with cover, saute/fry the onions and garlic in oil till the onions are translucent/soft and starting to brown. Add in celery. Saute/fry a few min, Add in broccoli and remaining chicken broth.
  2. Simmer, covered, eight min or possibly till tender-crisp.
  3. Stir in puree; add in seasonings. Serve immediately or possibly serve chilled. Top each portion with 1/4 c. minced watercress.
  4. Makes 11 one-c. servings.
