  2. Heat oil in large skillet, add in onions and garlic and cook over moderate heat till tender. Stir in finely minced spinach and cook, stirring constantly till all moisture has been boiled away and spinach sticks slightly to the pan. Transfer to a bowl.
  3. Brown the grnd meat and add in to spinach. Add in the remaining ingredients, mix thoroughly.
  4. = Besciamella =
  5. In a heavy 2 quart. sauce pan, heat butter over moderate heat. Remove from heat and add in the flour thoroughly. Return to heat and add in the lowfat milk stirring constantly till smooth and the sauce begins to thicken.
  6. Add in the cream and seasonings, still stirring. Sauce should be the consistency of very thick cream.
  7. NOTES : Optionally add in 2 chicken livers
