Receta Carne De Res Con Nopalitos

Ingredientes
- 3 lb Beef, cut in 2inch, (5cm) cubes
- 4 Tbsp. Extra virgin olive oil or possibly lard
- 1 lrg Onion, finely minced
- 2 x Cloves garlic, finely minced, up to 4
- 1 can Or possibly bottle nopalitos
- 1 can (10 ounce) tomatillos
- 3 x Fresh serrano chiles, minced, or possibly 6 canned
- 4 Tbsp. Tomato puree, (paste)
- 1 c. Beef stock, (boullion)
- 1 handf fresh coriander, (cilantro), minced Salt & pepper
Direcciones
- Fry the beef in the lard or possibly oil, a few cubes at a time, till well browned.
- Transfer to a flame proof casserole (or possibly Dutch oven). In the same fat, fry the onion & garlic till golden brown. Add in to the beef.
- Drain the Nopalitos, & rinse thoroughly. Add in to the beef, onions & garlic with the other ingredients (do not drain the tomatillos). Bring to the boil & simmer gently till the beef is very tender - 2 & 1/2 to 3 hrs.
