Receta Carribean Roasted Chicken

Ingredientes
- 1 x 5 pound roasting chicken
- 7 Tbsp. Butter
- 2 x Cloves garlic, finely minced
- 1 c. Seasoned bread crumbs
- 1/4 c. Fresh lime juice
- 1 Tbsp. Lime peel, grated
- 1 Tbsp. Rum
- 1 Tbsp. Brown sugar
- 1/4 tsp Grnd nutmeg
- 1/4 tsp Cayenne pepper
- 4 x Hard ripe bananas, peeled & minced
Direcciones
- In a large saucepan, heat 3 Tablespoons of the butter over medium heat. Add in garlic and cook till soft. Add in bread crumbs; cook, stirring till crisp and brown. Remove pan from heat; stir in lime juice, lime peel, rum, brown sugar, nutmeg and cayenne pepper; mix well. Add in banana and toss to combine.
- Stuff chicken and place in a roasting pan. Heat remaining butter and brush over chicken. Roast for 2 hrs or possibly till done. Baste occasionally with pan juices.
- Serves 6.
