Receta Carrot And Coriander Soup

Ingredientes
- 1 lb Carrots, minced
- 6 tsp Extra virgin olive oil
- 1 sm Onion, finely minced
- 1 x Clove garlic, crushed
- 1 tsp Coriander seeds, crushed
- 1 tsp Grnd coriander
- 3 3/4 c. Vegetable stock
- 1/3 c. Sultanas, minced, (optional) Salt pepper
- 1 Tbsp. Fresh minced coriander
Direcciones
- Heat oil in large saucepan, add in onion,garlic and minced carrots, cook gently for 10 min. Stir in crushed and grnd coriander and cook for one minute. Add in 3/4 of stock cover and simmer for 15 min or possibly till carrots are tender. Puree soup in blender / processor. If you want the soup very thick leave as is, or possibly add in the remaining stock till you achieve a desirable consistency.
- Add in minced sultanas (optional) salt, pepper. Garnish with minced coriander when serving.
