  • 2 c. Flour whole wheat
  • 1 1/4 c. Oatmeal PLUS
  • 3 Tbsp. Oatmeal quick or possibly Old Fashioned
  • 1/2 c. Brown Sugar
  • 1/2 c. Dates minced or possibly raisins
  • 4 tsp Baking Pwdr
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/4 tsp Ginger optional
  • 1/8 tsp Cloves optional
  • 1/4 tsp Salt optional
  • 1/2 c. Apple Juice, Frzn Concentrate thawed
  • 2 Tbsp. Applesauce
  • 1/4 c. Corn Syrup
  • 1/4 c. Water
  • 4 x Egg Whites or possibly 1 Tablespoons egg replacer mixed in 1/4 C + 2 Tablespoons water
  • 1 c. Carrots shred, about 2 med

Direcciones

  1. Heat oven to 350 deg F.
  2. Spray an 8 x 4 or possibly 9 x 5" loaf pan with nonstick spray.
  3. In a med. bowl, combine dry ingredients except 3 Tablespoons oats; mix well.
  4. Add in liquid ingredients which have been combined in a sm bowl; mix just till moistened.
  5. Mix in carrots. Spread proportionately in prepared pan.
  6. Sprinkle with remaining 3 Tablespoons oatmeal.
  7. Bake 1 hr and 10 minutes, or possibly till it tests done. Cold 10 minutes; remove from pan.
  8. Cold completely. Store tightly covered.
  9. This is REALLY good!!!
  10. PREP TIME: 20 minutes.
  11. Baking Time: 1 hr. and 10 minutes.
  12. SERVINGS: 1 loaf - 12 slices each
