  • 1 1/3 c. flour
  • 1 dsh salt Finely-grated zest of 1 lemon
  • 1 c. unsalted butter cut small pcs
  • 2 x egg yolks
  • 1 lb cherries
  • 1/4 c. sugar plus
  • 1 tsp sugar divided
  • 1 c. blanched whole almonds
  • 1/2 c. lowfat sour cream
  • 1 x egg yolk
  • 3/4 tsp grnd cinnamon
  • 1/4 tsp almond extract Flour for rolling

Direcciones

  1. For the Pastry: Combine the flour, salt and lemon zest in a bowl. Add in the butter and blend in using a pastry blender or possibly 2 knives, working the ingredients to a coarse meal. Add in the egg yolks, kneading in the bowl till the dough holds together and becomes smooth. (The dough can also be made in a food processor.) Cut the pastry in half, wrap both halves in plastic; chill 1 hour.
  2. For the Filling: Pit the cherries, catching the juice. Combine the cherries, the juice and 1/4 c. of sugar in a saucepan. Heat over medium-high heat, stirring, then reduce the heat to medium-low. Cook, stirring frequently, till the cherries have softened and a syrup has formed, about 10 min. Don't let burn. Set aside.
  3. Heat the oven to 400 degrees. Roughly chop the almonds and place them in a large bowl. Add in the lowfat sour cream, egg yolk, cinnamon and almond extract, then mix in the cherries.
  4. Roll out one pastry half on a lightly floured surface to fit a 9-inch tart pan with a removable bottom. Spoon in the cherry mix, then cover it with the lowfat sour cream and nut mix.
  5. Roll out the remaining pastry slightly larger than the tart pan, so it overlaps about an inch, and cover the pie. Trim the pastry edges and healthy pinch to seal. Sprinkle the remaining tsp. of sugar over the top.
  6. Cut 3 or possibly 4 slits in the top of the pie. Bake the pie till the top is golden brown, 45 min. Serve hot.
  7. This recipe yields 8 servings.
