Receta Chicken and Rice Soup

Ingredientes
- Vegetable oil
- 3 oz Chicken, cooked and diced
- 1 cup Spanish Onions, peeled, and diced
- 1 cup Celery, diced small
- 1 cup Carrots, washed peeled, diced small
- 1 cup Minced Garlic
- 1 cup Bay leaves
- 1 cup Crushed red peppers
- 1 cup Green Onion, green part only
- 1 1/2 gallon Chicken Stock
- 1 lb Long Grain Rice, cooked
Direcciones
- In a steam kettle, heat the oil, saute all onions, celery and carrots for 4 minutes
- Add garlic, bay leaves. a pinch of crushed red pepper and saute for one minute
- Add the stock and bring the liquid to a boil.
- Reduce the heat to a simmer. Reseason if necessary.
- Add the rice and grean onions and continue to cook for approximately 5 minutes.
- Then serve.
