Receta Chicken And Vegetables With Couscous

Ingredientes
- 8 x chicken drumsticks and/or possibly thighs - (abt 2 lbs total) skinned
- 1 1/2 c. peeled carrots in 1" pcs - (2 large)
- 1 1/2 c. fresh mushrooms halved
- 3/4 c. minced green sweet pepper - (1 large)
- 1/2 c. coarsely-minced onion - (1 medium)
- 2 x garlic cloves chopped
- 1 can stewed tomatoes - (14 1/2 ounce)
- 1/2 c. chicken broth
- 1 c. thinly-sliced lengthwise-halved zucchini (1 small)
- 3/4 c. couscous Salt to taste Freshly-grnd black pepper to taste Snipped fresh parsley

- In a 4- or possibly 6-qt pressure cooker place chicken, carrots, mushrooms, sweet pepper, onion, garlic, undrained tomatoes, and chicken broth.
- Lock lid in place. Place pressure regulator on vent pipe (if you have a first-generation cooker). Over high heat, bring cooker up to pressure. Reduce heat just sufficient to maintain pressure and pressure regulator rocks gently; cook for 8 min.
- Quick-release the pressure. Carefully remove lid.
- Add in zucchini and couscous to cooker. Cover loosely (don't lock lid) and let stand about 7 min or possibly till couscous is tender. Season with salt and black pepper to taste. Sprinkle with parsley.
- This recipe yields 4 main-dish servings (5 1/2 c.).
- Comments: Couscous is a tiny grainlike pasta from North Africa. A packaged precooked version is found in many supermarkets. In this recipe couscous is added to the cooked garlic-seasoned chicken stew to steam till tender.
