Receta Chicken Eggplant Spaghetti

Ingredientes
- 4 chicken breasts
- 1 med. eggplant
- 2 med. zucchini
- 1 green pepper
- 1 onion
- Garlic (2 cloves, fresh)
- 1 (16 ounce.) can whole tomatoes
- 1 (16 ounce.) can tomato sauce
- 1 (6 ounce.) can tomato paste
- Basil, thyme, oregano, parsley flakes
Direcciones
- Peel eggplant and cut into slices. Place in ice cool water while preparing recipe. Slice chicken into strips, brown in extra virgin olive oil. Set aside.
- Brown onion and green pepper till tender. Add in machine and eggplant. Add in chicken, tomatoes, tomato sauce and paste (with a little water). Add in seasonings (as desired). Simmer 2 hrs. Serve over spaghetti.
