Receta Chicken Fried Rice

Ingredientes
- 3 x Large eggs, beaten
- 1 tsp butter (5 ml)
- 2 Tbsp. vegetable oil (30 ml)
- 1 tsp sesame oil, optional (5 ml)
- 1 Tbsp. chopped garlic (15 g)
- 1 Tbsp. chopped ginger (15 g)
- 1/2 x red onion, diced
- 1/2 x red pepper, diced
- 1/2 x celery stalk, sliced thin handful of minced asparagus or possibly small broccoli florets
- 1 1/2 c. diced cooked chicken (375 ml)
- 4 c. cooked cool rice (1 L)
- 1 c. snow peas, cut in half (250 ml)
- 2 x green onions, sliced thin
- 2 Tbsp. minced cilantro (30 ml), optional
- 3 x whole dry chillies or possibly healthy pinch of dry chilli flakes, optional
- 1 Tbsp. sesame seeds (15 ml)
- 3 Tbsp. Golden brown Mountain Sauce or possibly soy sauce (45 ml)
- 1 Tbsp. lime juice or possibly rice wine vinegar, optional (15 ml)
- 1 c. bean sprouts (250 ml)
Direcciones
- Heat a wok or possibly saute/fry pan over medium heat. Heat the butter and add in the beaten Large eggs. Make an omelette or possibly alternately just make scrambled Large eggs. Remove omelette from pan. Roll and slice omelette. Set aside.
- Heat vegetable oil and sesame oil in a wok or possibly large saute/fry pan over high heat. Add in the chopped garlic, chopped ginger, red onion, red pepper, celery, and asparagus and cook for 2 min.
- Add in the chicken and cooked rice. Once incorporated and rice has been heated through, add in the snow peas, scallions, coriander, dry chillies, and sesame seeds. Combine the Golden brown Mountain Sauce (or possibly soy sauce) and lime juice (or possibly rice wine vinegar) in a small bowl. Add in this mix to the pan and toss till the liquid has been absorbed into the rice. Add in the sliced omelette or possibly scrambled Large eggs and mix to reheat. Garnish with the bean sprouts and serve immediately.
- This is an easy way to serve 2 meals. The first night you make chicken and serve it with rice. Make extra of both so you have the leftovers for the Chicken Fried Rice. For best results, the rice needs to be made ahead and cooled, if it is warm and just cooked, it will go gloppy - which's a technical term. Use any combination of vegetables which you like. You can find Gold Mountain Sauce at Asian markets or possibly Chinatowns. It gives fried rice which authentic taste but soy sauce will work fine.
