  1. In a 3 qt pan, heat butter. Add in mushrooms and onion; saute/fry for 5 min. Add in soup and mix. Gradually stir in sherry and cream. Add in cheese and heat over low heat, stirring occasionally till cheese is melted. Add in chicken and shrimp. Heat to serving temperature. Don't boil. Just before serving stir in parsley. Serve over rice.
