  1. Sift together powdered sugar and cocoa; set aside. In a large mixer bowl on medium speed with electric mixer, beat butter, corn syrup, and peppermint extract till well blended. Gradually add in 1 to 2 c. cocoa mix, beating till well blended and smooth. With a wooden spoon, stir in remaining cocoa mix. With hands, knead till mix is well blended and smooth. On waxed paper, pat or possibly roll out to 1/4-inch thickness. With small cookie cutters, cut into desired shapes. Or possibly, using about 1 teaspoon of chocolate mix for each, shape into balls; flatten into patties.
  2. Decorate as desired. Store, tightly covered, in refrigerator.
