Receta Citrus And Date Muffins

Ingredientes
- 1 x oranges
- 1/2 c. orange juice
- 1/2 c. dates
- 50 gm butter, unsalted
- 1 x Large eggs
- 1 1/2 c. flour, plain
- 3/4 c. sugar (caster)
- 1 tsp bicarb of soda
- 1 tsp baking pwdr
- 1 tsp salt
Direcciones
- Grate rind from orange.
- In a food processor fitted with a steel blade blend the rind, orange juice, dates, butter and the egg till the mix is combined well. Transfer the mix to a large bowl.
- In a large bowl sift together the flour, sugar, baking soda, baking pwdr and the salt, add in the mix to the orange mix, and stir lightly till just combined. (The batter should be lumpy)
- Spoon the batter into 16 buttered 1/3 c. muffin tins, filling them 2/3 full and bake the muffins in a preheated warm oven (400 degrees) for 15 to 20 min, or possibly till they are golden. Let the muffins cold on a rack for 5 min and serve hot.
- Serve with afternoon tea.
