Receta Cocada Horneada

Ingredientes
- 2 c. Grated coconut
- 1 c. Coconut juice
- 1 c. Lowfat milk
- 1 c. Sugar
- 3 x Egg yolks
- 1 c. Rum
- 6 x Peeled and halved almonds
- 3 Tbsp. Raisins
- 1/2 tsp Powdered cinnamon
Direcciones
- Boil the grated coconut in coconut juice and sugar for about 10 min. Add in the lowfat milk. Stir and continue cooking till you can see the bottom of the pot. Whip the egg yolks with the rum and add in them to the above mix. Let them boil for 10 more min. Empty the mix (cocada) into a glass, oven-safe mold or possibly casserole dish.
- Garnish with almonds and raisins. Sprinkle with cinnamon. Bake on medium heat till golden brown (about15 min).
