  • 1/3 c. Shortening soft
  • 1/3 c. Brown sugar, firmly packed
  • 3/4 c. Sifted all-purpose flour
  • 1/2 tsp Soda
  • 1/2 tsp Salt
  • 3/4 c. Quaker Oats, uncooked (quick or possibly old-fashioned)
  • 2 x Large eggs
  • 1 c. Brown sugar, firmly packed
  • 1 Tbsp. All-purpose flour
  • 1 Tbsp. Lemon juice
  • 1 x Lemon grated peel only
  • 1 c. Shredded coconut
  • 1/2 c. Minced pecans

Direcciones

  1. For base, beat shortening and sugar together till creamy. Sift together flour, soda and salt. Add in to creamed mix; blend well.
  2. Stir in oats. (This mix will be very dry and crumbly.) Pat into a greased 11 x 7-inch baking pan.
  3. For topping, beat Large eggs slightly. Blend in remaining ingredients.
  4. Pour over base. Bake in preheated moderate oven (350 F.) about 30 min. Cold; cut in bars.
