  • 1 c. cooked rice cool
  • 3/4 c. canned kidney beans rinsed, liquid removed
  • 1 med tomato minced about 1 c.
  • 1/2 c. frzn corn whole kernel, thawed
  • 1 Tbsp. minced green onions
  • 2 Tbsp. red wine vinegar
  • 2 tsp extra virgin olive oil or possibly vegetable oil
  • 1 tsp fresh basil minced or possibly 1/4 tsp. dry basil leaves Fresh spinach or possibly lettuce leaves if you like

  1. In medium bowl, combine all ingredients except spinach; toss well. Serve on spinach-line plates.
  2. Serves 2 (1-1/2 c.) servings.
  3. NOTES :TIP: To quickly thaw corn, place in strainer; rinse under hot tap water till thawed.
