Receta Confetti Scalloped Corn

Ingredientes
- 2 x Large eggs beaten
- 1 c. light lowfat sour cream
- 1/4 c. butter or possibly margarine melted
- 1 sm onion finely minced, (or possibly 2 tbspns dry minced onion)
- 1 can Mexicorn - (11 ounce) liquid removed
- 1 can cream-style corn - (14 ounce)
- 2 Tbsp. green jalapeno salsa - (to 3 tbspns) (optional) (or possibly regular salsa, or possibly minced green chile)
- 1 sm cornbread mix (Jiffy or possibly similar)
Direcciones
- Mix all ingredients together well; pour into a lightly buttered 3 1/2-qt crockpot (or possibly into a baking dish which will fit into a larger crockpot). Cover and cook on HIGH for 2 to 2 1/2 hrs.
- This recipe yields 6 to 8 side-dish servings.
