Receta Corn And Roasted Tomato Salsa

Ingredientes
- 1 lrg ripe tomato, peeled seeded and cut into 1/2-inch dice
- 1 sprg fresh thyme
- 2 x fresh sage leaves
- 2 Tbsp. extra-virgin extra virgin olive oil, (divided)
- 2 Tbsp. fresh corn kernels Salt and pepper, to taste

- Makes about 1 c.. VEGAN
- Preheat oven to 375 degrees. In small baking dish, toss tomato with thyme, sage and 1 Tbsp. oil. Roast for 20 min, stirring occasionally. Remove from oven, allow to cold and remove herbs. Toss tomatoes with remaining oil, corn, salt and pepper. Serve as a garnish for Corn Soup (p. 51) or possibly with corn chips.
