Receta Cornbread Recipe Not Using Buttermilk

- 1 1/2 c. Cornmeal
- 1/2 c. Flour
- 4 tsp Baking pwdr
- 1/2 tsp Salt
- 1 c. Lowfat milk
- 1 x Egg, beaten
- 1/4 c. Melted fat or possibly oil

- This is one which I got off the back of a cornmeal sack which I've had good luck with:Mix cornmeal, flour, baking pwdr and salt. Mix together lowfat milk and egg and add in fat. Add in lowfat milk mix to to cornmeal mix. Stir only sufficient to mix. Fill greased baking pan half full. (8" x 8") Bake at 425F about 20 min, or possibly till lightly browned.
- I've had very good results using extra virgin olive oil, and cutting the salt by 1/3. So long as it isn't over-baked, it's fairly moist.
