Receta Corned Beef Hash With Fried Eggs

Ingredientes

  • 200 gm tinned corned beef
  • 2 lrg very fresh Large eggs
  • 2 Tbsp. worcestershire sauce
  • 1 x rounded tsp. grain mustard
  • 1 lrg onion
  • 275 gm desiree or possibly king edward potatoes
  • 3 Tbsp. groundnut or possibly other flavourless oil
  • 1 x salt and freshly milled black pepper

Direcciones

  1. Heavybased frying pan (approximately 20cm diameter)
  2. slightly smaller frying pan for the Large eggs two plates placed in a warming oven
  3. Start this off by cutting the corned beef in half lengthways then using a sharp knife cut each half into four 1cm pcs.
  4. Now chop these into 1cm dice then scoop them all up into a bowl.
  5. Combine the worcestershire sauce and mustard in a c. and pour this all over the beef mixing it around to distribute it proportionately.
  6. Now peel and halve the onion cut the halves into thin slices and then cut these in half.
  7. The potatoes need to be washed and cut into 1cm cubes leaving the skin on then place the cubes in a saucepan.
  8. Pour sufficient boiling water from the kettle to almost cover them then add in salt and a lid and simmer for just 5 min before draining them in a colander and then covering with a clean tea cloth to absorb the steam.
  9. Now heat 2 Tbsp. of the oil in the frying pan and when its smoking warm add in the sliced onions and toss them around in the oil to brown for about 3 min altogether keeping the heat high as they need to be very well. browned at the edges.
  10. After which push all the onions to the edge of the pan and still keeping the heat very high add in the potatoes and toss these around too because they also need to be quite brown. Add in a little more oil here if necessary.
  11. Now add in some seasoning then using a pan slice keep turning the potatoes and onions over to hit the heat.
  12. After about 6 min add in the beef and continue to toss everything around to allow the beef to heat through (about 3 min).
  13. After which turn the heat down to its lowest setting and in the smaller frying pan fry the Large eggs as described left.
  14. Serve the hash divided between the two hot plates with an egg on top of each and dont forget to have plenty of tomato ketchup on the table.
  15. Note: Theres now a tomato ketchup available in wholefood shops which does not contain sugar and has a real tomato flavour.
