Receta Cornmeal Cheese Muffins

Ingredientes
- 1 1/2 c. all-purpose flour
- 1/2 c. yellow cornmeal
- 1/4 c. sugar
- 1 Tbsp. baking pwdr
- 3/4 tsp salt
- 1/2 c. small curd cottage cheese
- 3/4 c. lowfat milk
- 1/4 c. vegetable oil
- 1 x egg
- 1/2 c. shredded cheddar cheese
- 1/2 tsp dry thyme
Direcciones
- In a mixing bowl, combine flour, cornmeal, sugar, baking pwdr and salt.
- In another bowl, mash cottage cheese with a fork; add in lowfat milk, oil and egg.
- Add in to dry ingredients; stir just till moistened. Mix in cheddar cheese and thyme. Fill greased or possibly paper-lined muffin c. three-fourths full.
- Bake at 400 for 20-25 min or possibly till golden. Cold in pan 5 min before removing to a wire rack.
