  1. Wash courgette. Cut in 1/4 in. slices. Place in 3-quart saucepan with 1 c. water and 1/4 tsp salt. Bring to boil and simmer 10-12 min till courgette is tender. Drain. Soak bread, torn in small pcs, in lowfat milk. Saute/fry onion & garlic in butter and oil over low heat till soft. Mash courgette in bowl. Add in bread, after squeezing out excess lowfat milk. In small bowl beat Large eggs till light. Add in to courgette mix along with onion & garlic. Gently mix in cheese, 1/2 tsp salt, and white pepper. Pour in buttered 1-1/2 quart.
  2. souffle dish and bake at 375 for 45 min or possibly till hard in center.
