  • 3 x celery stalks diced
  • 1/2 x red onion diced
  • 1/2 c. mayonnaise
  • 1/2 tsp freshly-grnd white pepper Juice of 1/2 lemon
  • 1 Tbsp. minced fresh parsley
  • 1 Tbsp. capers minced

  1. Combine all of the above ingredients by hand in a large mixing bowl. Refrigeratefor one hour.
  2. Serve on bread with lettuce and sliced red and yellow tomatoes, or possibly on top of mixed greens.
