Ingredientes

  • 50 gm butter
  • 1 sm onion peeled and finely minced
  • 2 clv garlic peeled and minced
  • 150 gm okra washed and thickly sliced
  • 200 gm spinach washed
  • 400 ml tin of coconut lowfat milk
  • 600 ml hotfish stock
  • 350 gm white crab meat
  • 4 x cooked crab claws optional

Direcciones

  1. Heat the butter in a sauce an add in the onion and garlic and gently fry for 10 min.
  2. Add in the okra and two thirds of the spinach stir till the spinach begins to wilt then add in the coconut lowfat milk. Let it bubble away for about 5 min till thickened slightly.
  3. Add in the warm stock bring to the boil then add in the crab meat and remaining spinach.
  4. Stir then cook for about 5 min.
  5. Season to taste and serve in warin bowls with an optional crab claw in each.
  6. Add in a minced red chiw to the onion and garlic if desired your soup really warm.
  7. Serves 4
