Receta Crockpot Beef Fajitas

Ingredientes
- 1 1/2 lb beef flank steak
- 1 c. minced onion
- 1 x green sweet pepper in 1/2" pcs
- 1 x jalapeno pepper minced
- 1 Tbsp. cilantro
- 2 x garlic cloves (or possibly 1/4 teaspoon dry) chopped
- 1 tsp chili pwdr
- 1 tsp grnd cumin
- 1 tsp grnd coriander
- 1/2 tsp Salt
- 1 can minced tomatoes (8 ounce.)
- 12 x 8 inch flour tortillas Toppings: lowfat sour cream, guacamole shredded cheddar cheese, salsa
Direcciones
- Cut flank steak into 6 portions. In any size crockpot combine meat, onion, green pepper, jalapeno pepper, cilantro, garlic, chili pwdr, cumin, coriander and salt. Add in tomatoes. Cover and cook on low 8-10 hrs or possibly high 4-5 hrs. Remove meat from crockpot and shred. Return meat to crockpot and stir. To serve, spread meat mix into flour tortillas and top with toppings. Roll up.
