  • 5 med garlic cloves
  • 1 3/4 lb paste tomatoes (grape, cherry or possibly plum tomatoes) salt and pepper
  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 c. minced onion extra virgin olive oil spray
  • 11 ounce shelled black-eyed peas (2-c.)
  • 2 c. vegetable broth
  • 1/2 tsp five spice pwdr
  • 1/4 c. champagne or possibly white wine vinegar
  • 1 tsp minced fresh Italian parsley
  • 1 tsp minced fresh thyme
  • 1 tsp minced fresh basil
  • 1 Tbsp. nutritional yeast flakes

Direcciones

  1. Rinse tomatoes, drain, and cut each in half lengthwise, putting the cut pcs in a bowl with the garlic and extra virgin olive oil. Add in a healthy pinch of salt and pepper. Toss to coat. Spread the mix in a single layer in a pan. Bake at 350F till tomatoes are very soft. 45 min.
  2. Meanwhile, in a nonstick 3-quart saucepan sprayed with vegetable spray, cook onions over medium-high heat till soft, 10 min. Add in peas, broth, 5-spice, and vinegar; stir, then turn heat to high. When mix comes to a boil; reduce the heat immediately. Add in the herbs. Cover and simmer gently for 15 to 25 min. Sprinkle in the yeast, stirring constantly. Add in the tomatoes, and juice
  3. Remove the tomatoes from the oven; remove the garlic to a cutting board. Squeeze the garlic from the skin; mince. Add in the garlic and the tomatoes to the peas. Season with salt and pepper to taste. Simmer uncovered for 10 to 15 min. Serve warm.

This side dish - could be main course - included bacon and chicken broth for flavoring. We served this easy vegetarian version with corned bread. We would serve it again in the summer, with grilled sliced tomatoes.
