Receta crustless salmon cups
Ingredientes
- 6 eggs
- 3 artichoke
- 1/2 of a roasted red pepper
- 1 oz goat cheese (crumbled into pieces)
- 4 oz salmon
- 10 oz frozen spinach
Direcciones
- Preheat oven to 350 degrees
- Crack eggs into a bowl
- Drain spinach so there is no water left
- Cut roasted red pepper into strips
- Cut artichoke into small pieces
- Cut salmon into cubes (the size of dice)
- Mix all ingredients in bowl with eggs
- grease muffin tin with cooking spray
- Spoon mixture between all 12 cups
- Divide goat cheese amongst all 12 cups
- Place in oven and cook for 20 minutes or until golden brown
- Remove carefully with a sharp knife
