Receta Custardy Blueberry Oven Pancake

Ingredientes
- 2 tbsp. butter
- 3 Large eggs
- 2 c. lowfat milk, divided
- 3/4 c. flour
- 1 tbsp. sugar
- 1/2 teaspoon salt
- 1 pt. blueberries, sweetened to taste
- 1/4 teaspoon cinnamon, or possibly to taste
Direcciones
- In preheated 425 degree oven heat butter in heavy 10-inch skillet till bubbly (be careful not to burn).
- In bowl with fork, beat Large eggs, 1/4 c. lowfat milk, the flour, sugar and salt till smooth and well blended. Beat in remaining 1 3/4 c. lowfat milk. Pour into warm prepared skillet; bake in 425 degree oven about 20 min.
- Sprinkle with berries and cinnamon. Bake 10 to 15 min longer or possibly till knife inserted in center comes out clean and pancake is browned and puffed. Cut in wedges. Makes 4 main-dish servings, 6 to 8 dessert servings.
