  1. Wash brisket and season to taste. Place in roasting pan. Cover brisket with tomatoes, onion, green pepper and mushrooms.
  2. Cover pan and cook in preheated 350 degree oven. Roast about 2 1/2 hrs, or possibly till tender. Cold, remove fat and slice.
  3. Better if prepared day before and reheated in gravy and served. Serves 8-10.
