Receta Dressed Up Beans

Ingredientes
- 1 x (16-oz) package of mixed beans
- 6 c. water for soaking beans overnight
- 4 x -5 c. water when cooking
- 1 bn minced celery, including leaves
- 1 bn minced cilantro, with out stems
- 1 lrg yellow onion, diced
- 1/2 lb bacon, fried crisp and minced
- 1 x ham hock
- 2 x (15-oz) cans stewed tomatoes
- 1/4 tsp pepper
Direcciones
- Soak beans overnight in a large bowl and drain. Chop celery and cilantro.
- Dice onion. Fry bacon; drain and let cold. Chop coarsely. Place beans in a 3-qt pot; add in the celery, onion, cilantro and meat; pour the tomatoes and their juice over everything, and add in pepper. Add in water to cover beans and cook on a medium-low flame for 2 hrs, till beans are tender and meat is falling off the bone. Add in more water if necessary, Serves 6.
