  • 1 x (16-oz) package of mixed beans
  • 6 c. water for soaking beans overnight
  • 4 x -5 c. water when cooking
  • 1 bn minced celery, including leaves
  • 1 bn minced cilantro, with out stems
  • 1 lrg yellow onion, diced
  • 1/2 lb bacon, fried crisp and minced
  • 1 x ham hock
  • 2 x (15-oz) cans stewed tomatoes
  • 1/4 tsp pepper

Direcciones

  1. Soak beans overnight in a large bowl and drain. Chop celery and cilantro.
  2. Dice onion. Fry bacon; drain and let cold. Chop coarsely. Place beans in a 3-qt pot; add in the celery, onion, cilantro and meat; pour the tomatoes and their juice over everything, and add in pepper. Add in water to cover beans and cook on a medium-low flame for 2 hrs, till beans are tender and meat is falling off the bone. Add in more water if necessary, Serves 6.
