  • 2 lb Tilapia Fillets, rinsed and patted dry
  • 20 x Green Olives, with pimientos, or possibly Pitted Black Olives, sliced
  • 4 clv garlic, minced fine
  • 1 lrg can Stewed Tomatoes, with juice
  • 2 Tbsp. Parmesan Cheese, grated - or possibly to taste
  • 1 1/2 Tbsp. Seafood Seasoning
  • 1 1/2 Tbsp. Seafood Seasoning Salt - to taste Freshly-grnd Black Pepper Fresh Parsley, minced

  1. Cooking Time: 20-25 Min
  2. While oven is preheating to 3750 F, arrange the Fillets in a large, glass casserole dish and pour the tomatoes and their juice over Tilapia Fillets.
  3. Sprinkle Fillets with seafood seasoning, salt, and pepper - to taste, followed by olives and then, grate the Parmesan cheese over the top. Bake fish uncovered, oven till just opaque in center (about 20-25 min, for Fillets about 1" thick).
